Step 1: Cook the Noodles
Bring a pot of water to boil.
Add noodles and cook according to package instructions (usually 5–7 minutes).
Drain and toss with 1 tsp sesame oil to prevent sticking.
Step 2: Make the Peanut Sauce
While the noodles are cooking:
In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, and sriracha.
Add warm water slowly until the sauce is smooth and creamy.
Taste and adjust—add more soy for saltiness, honey for sweetness, or sriracha for spice.
Step 3: Stir-Fry the Veggies
Heat 1 tbsp oil in a pan.
Add vegetables and sauté for 3–4 minutes (they should remain slightly crisp).
Optional: Add a pinch of salt for flavor.
Step 4: Combine Everything
Add cooked noodles and peanut sauce to the pan with veggies.
Toss until everything is well coated and heated through.
