Quick Thai Peanut Noodles Recipe in 20 Minutes Easy & Delicious!

Thai peanut noodles are a popular dish inspired by traditional Thai flavors—sweet, salty, spicy, and tangy—brought together in a rich peanut sauce. Unlike complex Thai curries, this recipe is quick, simple, and requires no special cooking skills. It’s a perfect introduction to Thai cuisine for beginners.

Ingredients
  

  • For the Noodles:
  • 8 oz rice noodles or any thin noodles
  • 1 tbsp sesame oil or vegetable oil
  • 2 cups mixed vegetables bell peppers, carrots, broccoli
  • For the Peanut Sauce:
  • ½ cup creamy peanut butter
  • 3 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup for vegan
  • 1 –2 tsp sriracha optional, for spice
  • ¼ cup warm water to thin the sauce
  • For Garnish:
  • Crushed peanuts
  • Chopped green onions
  • Fresh cilantro
  • Lime wedges

Method
 

  1. Step 1: Cook the Noodles
  2. Bring a pot of water to boil.
  3. Add noodles and cook according to package instructions (usually 5–7 minutes).
  4. Drain and toss with 1 tsp sesame oil to prevent sticking.
  5. Step 2: Make the Peanut Sauce
  6. While the noodles are cooking:
  7. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, and sriracha.
  8. Add warm water slowly until the sauce is smooth and creamy.
  9. Taste and adjust—add more soy for saltiness, honey for sweetness, or sriracha for spice.
  10. Step 3: Stir-Fry the Veggies
  11. Heat 1 tbsp oil in a pan.
  12. Add vegetables and sauté for 3–4 minutes (they should remain slightly crisp).
  13. Optional: Add a pinch of salt for flavor.
  14. Step 4: Combine Everything
  15. Add cooked noodles and peanut sauce to the pan with veggies.
  16. Toss until everything is well coated and heated through.
